Peri peri Chicken Rice Bowl

| Basmati Rice | 1 cup |
| Chicken Stock | 1.5 cups |
| Oil | 1 tbsp |
| Butter | 1 tbsp |
| Small Onion (Chopped) | 1 |
| Garlic | 1 tsp |
| Salt | 1/2 tsp |
| Paprika Powder | 1/2 tbsp |
| Turmeric Powder | 1/2 tsp |
| Dipitt Peri Peri Sauce | 2 tbsp |
| Green Bell Pepper (Cubes) | 1/2 |
| Tomato (Cubes) | 1/2 |
| Green Chilli | 1 |
| Coriander/Parsley (Chopped) | as required |

Method:
- Wash and soak the rice for 20 minutes. Meanwhile in a pan add oil, butter, garlic and onion. Saute till softened.
- Add the mentioned spices to the chicken and Dipitt Peri Peri Sauce and mix well.
- Grill or pan-fry the marinated chicken breasts until fully cooked and slightly charred. Set aside.
- To the pan with sautéed onions and garlic, add chicken stock and soaked rice. Let it come to a boil.
- In the end add capsicum, tomatoes and green chilli. Reduce the heat to low and cover the pan.
- Cook for 10 minutes, then turn off the heat and keep the pan covered for 5 to 7 minutes.
- Add coriander. Then serve hot with the chicken.
