How to Marinate Skirt Steak

How to Cook Skirt Steak:
Thread each skirt steak strip onto a pre-soaked skewer. Lay the skewers on the grill perpendicular to the grill grates, over high direct heat, the hottest part of the grill. Grill for 3 to 4 minutes per side, until the meat is cooked through.

- 2 pounds skirt steak, trimmed of membranes and silver skin
- 1/3 cup olive oil
- 4 garlic cloves, mined
- 1 cup fresh parsley leaves
- 1 cup fresh cilantro leaves
- 2 tablespoons lemon juice
Grilled Skirt Steak Skewers Preparation
First of all, pulse the garlic in a food processor and set aside 1 teaspoon of minced garlic. Put 1 teaspoon of salt, 1/2 teaspoon red chili pepper flakes, 2 table spoon lemon juice in the food processor and minced properly. Put all the marinade ingredients in a small bowl and stir to combine.
Lay the skirt steak horizontally on a cutting board and cut the skirt steak into 6-8 inches long in strips across the grain.
Put the steak slices in a large pan and marinate for at least 30 minutes to 45 minutes. Pre-heat the grill for high-direct heat and thread the marinated skirt steak strips onto soaked skewers.
Before starting to grill, must brush the grill grates with olive oil. Lay the skirt steak skewers on the hot grill grates and grill the steaks for the next 3 to 4 minutes per side and keep changing the sides until cooked through.
