Method:
For Salsa:
- In a bowl, add tomatoes, cucumber, onion, bell peppers, jalapeños, coriander, jalapeño water, lemon juice, vinegar, hot/sriracha sauce and ketchup.
- Mix until everything is covered.
For Beef:
- Add beef to a very hot skillet.
- When beef changes colour, add some garlic, chilli flakes, soy sauce, Oyster sauce, honey, vinegar and sugar.
- Cover and let cook for 5 minutes until the beef becomes tender.
- After 5 minutes, mix in bird’s eye chillis.
For Nachos:
- Cut up some tortilla bread into bite-size triangles and fry, bake or air-fry them until crispy and golden-brown.
For Assembly:
- On your plate, start with tortilla chips, then crispy beef, salsa, some homemade sour cream and Dipitt’s jalapeño salsa.
- Garnish with fresh coriander and dig in!
